Pecan Tassies


Ingredients

Crust

  • 1 stick butter or margarine
  • 3 oz. cream cheese
  • 1 cup flour

Filling

  • 2 eggs, lightly beaten
  • 2 Tbs. butter or margarine
  • 1½ cups brown sugar
  • 2 tsp. vanilla
  • 1½ cups pecans, chopped
  • dash salt

Instructions

  1. Preheat oven to 325 degrees

  2. Mix butter, cream cheese and flour together for crust and chill in plastic wrap in refrigerator for at least one hour.

  3. Mix together the eggs, butter, sugar, vanilla, pecans, and salt.

  4. To prepare crusts, divide dough evenly into 36 small balls. Place each dough ball in a lightly greased muffin cup and press dough to make a small crust. Fill each pie half full with filling. Do not overfill.

  5. Bake at 325 degrees for 20 minutes or until filling is set.

  6. Let cool a few minutes and turn out from muffin tins. May be frozen in tins or tightly closed containers.
