Gingerbread Pear Muffins


Ingredients

  • 1 medium pear
  • 1 tsp. lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 2 tsp. ground ginger
  • 1/2 tsp. ground allspice
  • 1 tsp. baking soda
  • 1/3 cup buttermilk
  • 1/2 cup molasses
  • 1/4 cup vegetable oil
  • 2 eggs slightly beaten

Instructions

  1. Preheat oven to 350 degrees

  2. Peel and core pear; finely chop. Sprinkle lemon juice over pear in small bowl and set aside.

  3. Combine flour, brown sugar, ginger and allspice in a large bowl, mixing well. Make a well in center of mixture.

  4. In a separate bowl, dissolve baking soda in buttermilk; stir in molasses, oil, eggs and pear mixture.

  5. Add to dry ingredients, mixing just until moistened.

  6. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 350 degrees for 15 to 20 minutes.
