Mandarin Black Bean Salad


Ingredients

  • 2 cups mandarin orange segments (2 11 oz cans)
  • 1 cup canned black beans, rinsed and drained (~1 16 oz can)
  • 3/4 cup jicama
  • 2 Tbs. chopped red onion
  • 2 Tbs. seeded, minced jalapeno
  • 2 Tbs. shredded fresh mint leaves
  • 1/4 tsp. salt

Instructions

  1. Stir all the ingredients in a large bowl.

  2. Let stand until ready to serve, tossing occasionally.
